
ANZACS were a staple in our home growing up, there was always a large jar filled with them in our pantry, ready to be dunked into a hot cup of tea. Although most people will only have them every year when we remember our ANZAC diggers, I am sure that every family has their version of the humble, but delicious ANZAC.
This is my go-to, hope you enjoy!
ANZAC BISCUITS
150g plain flour
2 tsp ground ginger
100g rolled Opts (NOT quick oats)
95g desiccated coconut
140g caster sugar
150g unsalted butter
1 tbsp golden syrup
1 tsp bicard soda
30ml tap water
Preheat oven to 175C fan-forced and line two biscuit trays with baking paper
Combine flour, ginger, oats, coconut and sugar in large mixing bowl with a spoon
Put butter, golden syrup, water and bicarb soda into a small saucepan, heat mixture until it foams, then pour into bowl with dry ingredients and mix well.
Spoon teaspoons of mixture on to trays, allow room for spreading.
Bake until golden.
Enjoy with a hot cup of tea or coffee!
