
Mum discovered these Almond Thin Crackers on her Thermomix and now we all have a batch in our pantry ready to go for an easy and healthy lunch, snack or to pull out when people pop around! These are low carb and gluten-free too. We have also made them with some parmesan cheese thrown in, because cheese makes EVERYTHING better.
You don’t need a Thermomix to make this, I have made it in my food processer too and it works just as well!
ALMOND THIN CRACKERS
300g raw almonds
1 tsp sea salt flakes
½ tsp cayenne pepper
1 sprig fresh rosemary, leaves only
40g olive oil
30g water
2 tbsp black sesame seeds
Optional: Parmesan cheese to taste
Preheat oven to 175C degrees and line a baking tray with baking paper.
Blitz the almonds in your thermomix/food processer until fine. Add in the dry ingredients salt, cayenne pepper, rosemary, then the liquids, olive oil, and water. Mix well until it forms a thick mixture.
Press mixture onto the baking tray and roll out to around 3mm thick.
Bake in oven for around 20mins until it starts to go brown.
Let cool and break into pieces.
