
Special women in your life should be spoiled all the time if you ask me, but Mother’s Day is the perfect opportunity to surprise Mum with a delicious breakfast in bed. I promise it doesn’t matter how fancy it is, it’s all about the effort and for her not to have to think about preparing another meal. Here are a few super easy ideas to whip up a yummy breakie for Mum at the last minute. Also – champagne and orange juice and a strong coffee is ALWAYS a good idea!
#1 Avo on Toast
Tried and true. Head to the supermarket or your local bakery and grab some fresh sourdoguh, add some smashed avo, lemon juice and feta if you have it. Voila! Delicious and easy. You can add an egg too for extra points.
#2 Waffles & Berries
Off to the supermarket again, pick up some waffles, the Belgian ones are the best. Toast them, and top with some maple syrup, fresh berries and cream (if she likes it)
#3 French Toast
It sounds complicated, but they really are easy. This recipe is super simple and you probably already have the ingredients at home. If you’re wanting to test yourself then this Jamie Oliver recipe looks AMAAAZING. And there’s a video!
#4 Eggs any way
If she’s not a fan of a sweet breakfast then never underestimate the power of a ‘dippy-egg’ and toast fingers (with lots of butter). Gorden Ramey’s ‘perfect scrambled eggs’ are also sure to be a winner.
#5 Heart Pancakes
Whip up some pancakes from scratch, or a packet… no judgment here! Throw in some chocolate chips if that’s Mum’s fancy and use a cookie cutter or freehand cut them into hearts. She will LOVE them!
