
Honestly, this is the easiest loaf cake you can make. You only need ONE measuring cup, a loaf tin and a bowl. It’s tasty, ‘healthy’, lasts for ages in the pantry and can be frozen. It’s one of those staple recipes that we always reach for, and I promise you will too!
HEALTH LOAF
1 cup Wholemeal Flour
1 cup Raw Sugar (but you can reduce this to 1/2 cup if you want)
1 cup chopped dried apricots
1 cup chopped dried dates
1 cup shredded coconut
1 cup Milk
Optional: I have never tried it but you could also include some chia seeds or change the dried fruit to apple, sultanas for variety!
Preheat oven to 160C degrees and line a baking loaf tin with baking paper.
Add all of the dry ingredients into a bowl and mix. Then add the mix and stir together until combined.
Pour mixture into the lined loaf tin and bake until brown on top. You can test with a skewer in the middle to make sure it’s cooked.
Sometimes I even turn the oven off and leave it in there just to make sure it’s cooked.
Allow to cool, cut a slice from the end (the best part) add a SLATHER of butter and enjoy!
