
I am not a fan of creamy pastas so I always avoided anything Carbonara. That is until I met my Italian friend Roberta whilst living in America. We were discussing delicious, toddler happy dinner and this sounded too good and easy to be true. She would make it a few times a week.
My husband was skeptical when I was making it and then decided to eat 3 bowls and asked for it a week later, so it’s safe to say it was a hit. Best of all it’s ready in under 15 minutes, and eaten in probably less!
ROBERTA’S CARBONARA
Makes 2, or 1 depending on how big your glass is!
1 packet Pasta (smaller/thinner types work best)
2-3 rashes of bacon, chopped
2-3 eggs
Grated parmasen cheese
Salt & Pepper to taste
Cook the pasta as per the instructions on the packet.
Whilst it’s cooking, fry your bacon pieces.
Once pasta is cooked, remove from the heat and quickly mix in 2-3 beaten eggs to the pasta. You want to stir, stir, stir.
Then add in your bacon, parmasen cheese, salt and pepper to taste.
DONE! It’s so easy.
And you can also substitute Zucchini for the Bacon to make a vegetarian version.
