
This meatloaf is the BEST. It was my Nanna’s recipe that is still cooked throughout our extended family. It was my favourite meal when I returned home from boarding school each term. Meatloaf, mashed potato and broccolini. YUM! Now, I cook it regularly for my family and also guests – so far I haven’t had a bad report from it.
The trick is lots and lots of sauce and to baste regularly. I generally DOUBLE what’s in this recipe. There are some random ingredients but, trust the process, you won’t be disappointed. At least I hope not! Oh and it’s also AWESOME the next day on toast or in a jaffle.
SAUCY MEATLOAF
1 kg Beef Mince
1 brown onion, chopped
2 bacon rashes chopped
1 tbsp curry powder
2 tbsp parsley chopped
2 slices white bread, broken up into smaller pieces
1/2 cup milk
1/2 cup water
1 egg
Sauce (I prefer to double this so there is LOTS of sauce)
3/4 cup Tomato sauce/ketchup
2 tbsp Worcestershire sauce
Tsp Coffee Powder
1/2 cup hot water
Squeeze lemon juice
2 tbsp Brown sugar
Preheat oven to 180C. Mix all ingredients in a bowl. Let the milk and water soak into the bread so it’s easily mixed in. Put in a large baking tray and shape into a loaf. Put it in the oven for 30 minutes.
Whilst cooking, prepare the sauce.
After 30 mins pour the sauce over the meatloaf and cook for a further 45 minutes basting regularly.
