
I grew up with this dessert. I basically knew it off by heart growing up. And then it was always a special treat when I returned home from boarding school. Now it’s a staple dessert that I serve if entertaining, and ANYONE that I have given the recipe to are obsessed. I have lost count how many times my mother-in-law has made it. Definitely file this under COMFORT cooking.
SELF- SAUCING BUTTERSCOTCH PUDDING
Pudding
1 cup Self Raising Flour
3/4 cup Sugar
1/2 tsp Salt
2 oz Butter
1/2 cup Milk
Sauce ( I like to double this so it’s really saucy)
2 tbs Golden Syrup
1 oz Butter
1 1/2 cup Hot Water
Preheat oven to 180C. Sift the salt, sugar, and flour into a bowl. Melt butter and add to the flour mixture and then the milk. Pour into a well-greased ovenproof dish.
In a microwave dish or in a small saucepan, melt the sauce ingredients together then pour over the pudding mixture.
Bake in the oven for around 30-40 minutes.
Best served straight out of the oven and with vanilla ice cream!
