Pineapple Mojito

Wearing my favourite Cotton On Top and Shorts and using these gorgeous glasses from Blue Maisonette

The perfect summer twist on a classic cocktail, a Pineapple Mojito. This recipe is for one but I think it would make a great ‘pitcher’ cocktail too.

PINEAPPLE MOJITO
1/4 cup diced fresh Pineapple
1/2 cup Pineapple Juice
3tps sugar
4 Lime wedges
1oz/30ml Soda Water then more to top up
10-12 Mint Leaves
2oz White Rum

Squeeze the lime wedges into a glass, then drop them straight into it. Add the sugar, club soda and fresh pineapple then muddle the ingredients together. There should still be some small chunks of pineapple.

Stack the mint leaves in your had then smack the leaves with your other hand about 5-6 times until they’re fragrant. When you can smell the min, rub the leaves over the rim of your glass then drop into your glass.

After you drop the mint, add the pineapple juice and rum.

Then fill glass with ice, leaving about an inch of room. Top off with your soda water and give it a good stir.
