Salty & Sweet Candy Macadamias

Looking for the perfect party snack or hostess gift? These candied Macadamias are the perfect combination of salty & sweet and they are SO moorish. Like, REALLY moorish. And they’re super easy to make. Also – don’t be tempted to try and double the recipe! I have tried and it doesn’t work. Just make it in batches and everyone will be happy!

What you need
1-2 tbs macadamia oil or light olive oil
280g shelled macadamias
1/2 cup caster sugar
1 1/2 tsp salt
2 tsp ground cumin
3/4 tsp ground coriander seeds
1 tbsp caster sugar (extra)
1 tsp sea salt flakes

Heat the oil in a heavy based pan on a medium-low heat. Then add the Macadamias and coat. Sprinkle in the 1/2 cup caster sugar and stir, watching it like a hawk so it doesn’t burn. You’ll need to stir, stir, stir. You want them to form a darkish toffee.

Whilst they are cooking mix together all of the spices, sugar and salt.

When the nuts are ready spread them out on a lined baking tray and then sprinkle the spice/sugar mixture over the nuts and stir together, then spread out evenly onto the tray. Let them cool and set.

Once cooled, put them in a jar and seal tightly. Good luck not eating them all in a few days!
