Springtime Passionfruit Patty Cakes

I saw some delicious passionfruit at my local supermarket and just had to buy them. They reminded me of when I would stay at my cousin’s house when I had a free weekend from boarding school and my Aunty would have a fresh tin of Passionfruit Patty Cakes in the pantry. Being a boarder and generally hungry ALL the time, we devoured them. So I asked her for the recipe. She thinks it may possibly be HER Grandmother’s recipe.   

Springtime Patty Cakes  

4 oz (125 g) butter
1 level cup of caster sugar
2 eggs (room temp)
½ cup milk 
2 cups SR Flour 
1 tsp vanilla or to taste

Soften the butter then cream the butter and sugar well until the sugar is dissolved. Beat in the eggs (eggs at room temperature) one at a time. Add the milk and flour (sieved) alternately a little at a time. Don’t overbeat once you’ve added the flour. Place in patty cake tins and about half fill each one. Bake in a brisk oven (about 190) for about 10/15 minutes.  

Now the icing Probably about 2 cups icing mixture and about 2 oz (60 g) butter. Beat together well and add just enough passionfruit to make a spreadable mixture. It’s a case of adding a little until it seems the right texture for spreading.
